Pork

Our pork is pasture raised and their paddocks are moved weekly. This is beneficial for the land and the animals in many ways. It is beneficial for us too! The animals get more nutrients stored in the meat, and that is beneficial to us.  The lard especially is high in nutrients when it is raised on pasture. Remember hearing our ancestors rave about lard pie crust? I do. Now I know why!

This is the recipe I mention where I've been told that is tastes just as good as steak. Is that hard to believe? I know I would be skeptical, because I like my steak. Just give it a shot though! The secret is a combination of brine, a good sear, and the flavor that only pasture raised can give.
