Grilled Pork Chops

Our secret for great grilled pork chops is using a brine. This method gives great flavor, and we've been told it's better than some steaks!

Ingredients

4 Pork chops

1/4 cup salt

4 cups water

2 TBSP brown sugar or sucanat

2 TBSP apple cider vinegar

3 garlic cloves, smashed

3 rosemary sprigs or 1-2 tsp  whole dried rosemary

Directions

Heat water, salt, brown sugar, vinegar, garlic, and rosemary in a pan until salt is dissolved. Let cool. Add chops and let it sit in the brine 30 minutes-2 hrs, but don't exceed 2 hours or chops will absorb too much salt. Once brining is complete, remove chops from brine, rinse under cool water, and pat dry. Grill on med/high heat until desired doneness. We like ours medium, which is about 3-5 minutes a side, but every grill is different! Once done, remove from grill and let rest, covered with foil, for 10 minutes before serving.  This will continue to cook them slightly so be sure to account for that in the grill time.  Bon Appetit!
